COURSE DESCRIPTION:

This is an introductory course in Food and Hospitality at Year 11. The course is 50% theory and 50% practical and is made up of 7 Unit Standards. The topics studied include: Knife Skills, Fruit and Vegetables, Cakes, Sponges and Scones, Eggs and Cheese, Frying and Grilling and Hot Finger Food. The course is internally assessed. In 2018 25% of the course fee MUST be paid at course commencement.


CATERING AND HOSPITALITY

ASSESSMENT: Level 2 Unit Standards

COURSE COST: $100 Food and consumables
TOTAL CREDITS: 17 Internal (Level 2)


COURSE DESCRIPTION:

This is a full year course in Catering and Hospitality for students at Year 12 or 13 with an interest in cookery and hospitality. The course is 60% practical and 40% theory with an emphasis on the preparation and presentation of food for the commercial catering industry. All topics are internally assessed. Topics will be selected from: Food Safety, Knife Skills, Salads, Sandwiches, Frying, Roasting, Grilling, Microwave Cooking, Baking, Hot and Cold Beverages and Mocktails. Students will be expected to assist with some school catering events. In 2018 25% of the course fee MUST be paid at the start of the course.



NAENAE KAI - CATERING ACADEMY

ENTRY REQUIREMENTS: CAH212, US167 OR by application to ‘Naenae Kai’

ASSESSMENT: Level 2 & 3 Unit Standards

COURSE COST: $50 Chef’s jacket, apron and trousers

TOTAL CREDITS: 14 Level 3 credits


COURSE DESCRIPTION:

This is a full year advanced course in Catering and Hospitality for students with a strong interest in Hospitality as a career. For this course, it is strongly recommended that students have completed US 167 and a full year of Level 2 Catering and Hospitality at Year 12. ‘Naenae Kai’ will consider applications for students without these prerequisites. This course is delivered through ‘Naenae Kai’ as the Level 3 practical work must be completed in a commercial kitchen with real end users. Students will work with the ‘Naenae Kai’ providers for 3 hour practical sessions every week preparing and serving food to customers. In addition, theory work is completed independently in the PEM232 course. Students will also assist with school catering events and may obtain extra work experience through Gateway placements.
